Our Farm
Emerald Tide Oysters are farmed in the beautiful waters of East Bay in Santa Rosa County. We use 100% sustainable and environmentally friendly techniques. Our oysters are captive spawned in hatcheries, so that we do not interfere with the natural native oyster populations. Raising oysters in floating cages has minimal effect on the bottom ecosystem. Harvest requires no bottom contact, unlike most bottom culture methods that rake or comb the seafloor. The water quality and ecosystem is actually improved by the oysters’ filtration qualities as well as the additional habitat provided by the cages. The abundance of fish and crustaceans that live in/on/around the cages, where there previously was only open water with bare sand bottom, shows the environmental benefits of the farm.

Our Story
Emerald Tides Oyster Company is owned and operated by the McAndrew family in Gulf Breeze, FL. We are proud and super grateful to be a part of this wonderful community.
Born and raised in central Louisiana as an alligator farmer, Ryan McAndrew and his family ventured to the Florida panhandle in late 2018 to start Emerald Tides Oyster Farm. After strenuous research and planning, the farm site was chosen and permits were obtained in early 2019. Ryan and his father, Steele McAndrew, then started constructing the farm.
The effort required to operate the farm is not easy, but Ryan always feels blessed to call something he loves “work.” He takes pride in always doing his best, and appreciates when oyster lovers honk at him as they pass on Garcon Point Bridge.
